At the Pavillon station, at an altitude of 2,173 metres, Cave Mont Blanc cultivates and processes grapes from Europe’s highest vineyard: a true high-altitude workshop where the ‘Cuvée des Guides’ Metodo Classico is produced, dedicated to Alpine tradition and the Mont Blanc Guides.
Throughout the day, visitors will be able to witness the Dégorgement event, the heart of sparkling wine production and the process by which Europe’s highest-altitude sparkling wine is created.
Dégorgement involves removing the deposits of spent yeast formed during bottle fermentation, ensuring the wine is perfectly clear. The bottles will be ‘disgorged’ after spending the night in the snow to allow the pied de cuve mixture to settle at the bottom.
